Spinach is good for you! Here’s a good for you Grilled Cheese Sammie!
What a good find. We were looking for some artichoke recipes and we came across this beautiful green SPINACH and ARTICHOKE GRILLED CHEESE! This is a great pairing for a grilled cheese sandwich. We know that spinach and artichoke dip is awesome, for most. We also know that grilled cheese sandwiches are so awesome that Food Trucks have specialized in making the most unique and memorable grilled cheese sandwiches. (We are currently on the hunt for such food trucks…YUM!) So, how about adding this sammie recipe to your faves?

What’s great about this grilled cheese is that you can make some healthy choices for the bread (wheat) and cheese (skim and light), not to mention again that spinach and artichokes are on the good for you list. Check out how Kristen makes this sandwich. She gives some options such as turkey for protein or vegetarian bacon for some added flavor. The main ingredients to this grilled cheese are great, so anything else you may add will most likely be a creative genius move on your part! YUM!
2 slices reduced calorie wheat bread
2 oz deli turkey breast
1 tbsp light cream cheese
1/4 cup canned artichoke hearts, chopped
1/2 cup fresh spinach
3 tbsp shredded mozzarella cheese, part skim
Salt and pepper
- Soften the cream cheese in the microwave (30 secs).
- Mix together the spinach, artichokes, cheeses, salt and pepper.
- Spread the mixture between the slices of bread (option: add turkey slices).
- Heat up your skillet (spray with nonstick spray) and grill your sandwich.
This may be a new favorite way to eat your spinach!
