Sweet Potato Fritters…Baked!

  • We love sweet potato fries, so why not try some sweet potato fritters? Fritters are usually pan or deep fried.  Although most of us enjoy fried snacks, sometimes it’s nice to have a yummy alternative. These fritters are actually NOT deep fried, just oven baked. So, here’s a healthier option if you love fritters of any kind.

    Baked Sweet Potato Fritters!

    We found these sweet potato goodies from Melissa at The Farm Girl Gabs. Like us, she loves sweet potatoes. We’re happy that she shared this recipe because we always love fritters, too. We also think that adding scallions to these fritters is a tasty idea. Scallions combine so well with really any potato, bringing out great flavors! Using an Italian seasoning in this recipe also gives these fritters bold flavor. We love that Melissa also shared a yummy garlic dip for these sweet potato fritters. She also uses this garlic dip for a traditional chip and dip recipe. Sounds good to us. Check out how to make the dip, following the fritters.

    Grab:

    • 2 large sweet potatoes or yams (about 1 lb.)
    • ⅔ cup Parmesan cheese, grated
    • ½ cup scallions, thinly sliced
    • ½ cup eggs (about 2 eggs), beaten or egg substitute
    • ¼ teaspoon cayenne pepper
    • 1 teaspoon salt
    • ½ teaspoon Italian seasoning

    Make It:

    1. Preheat oven 425 degrees, F.
    2. Peel and grate sweet potatoes in a medium bowl.
    3. Add beaten eggs, cheese, scallions, cayenne pepper, Italian seasoning and salt to bowl of grated sweet potatoes.
    4. Place parchment paper on baking sheet and scoop sweet potato mixture with ice cream scoop. Place scoops  evenly on sheet.
    5. Bake, 20-25 minutes until crisp and golden.
    6. Serve with smoky garlic dipping sauce.

    *To make Smoky Garlic Dipping Sauce:  Mix all ingredients below into a small bowl and refrigerate for 1 hour before serving.

    • 1 cup light sour cream OR non-fat plain yogurt
    • 2 tablespoons scallions, thinly sliced
    • 1 Garlic Cloves, crushed
    • ½ teaspoon smoked paprika
    • ¼ teaspoon cayenne pepper
    • ½ teaspoon salt
